Ingredients
- 3 servings (45g) Biomel Belgian Chocolate Complete Gut
- 90g gluten-free rolled oats
- 30g pumpkin seeds
- 30g sunflower seeds
- 30g raw pistachios
- 40g dried cherries
- 85g + 1 tbsp smooth, drippy peanut butter
- 60g maple syrup
- 2 tbsp melted coconut oil
- 50g dark chocolate (optional, for dipping/drizzling)
Method
- Toast the oats, pistachios, pumpkin seeds, and sunflower seeds in a dry pan over low–medium heat for about 5 minutes, stirring often.
- Transfer the toasted mix to a large bowl.
- Add the peanut butter, maple syrup, melted coconut oil, dried cherries, and Biomel Chocolate Complete Gut.
- Stir until everything is well combined and forms a sticky mixture.
- Line a loaf tin with baking paper and press the mixture firmly into the base.
- Place in the fridge to set for a few hours, or speed things up by chilling in the freezer.
- Once firm, slice into squares or bars.
- For extra indulgence, dip each square in melted dark chocolate and drizzle more on top.
- Store in an airtight container in the fridge for up to 1 week.
