Ingredients
- 2 medium apples, peeled, cored and diced
- 150g plain flour
- 1 tsp baking powder
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 100g caster sugar
- 2 medium eggs
- 100ml vegetable oil or melted butter
- 1 tsp vanilla extract
- 2 tbsp plant based milk
- Pinch of salt
Method
- Preheat the oven to 180°C (160°C fan) / Gas Mark 4 and line a 20cm round cake tin.
- In a bowl, whisk together the eggs and sugar until pale and slightly thickened.
- Add the oil or melted butter, vanilla extract and milk, and mix until combined.
- In a separate bowl, sift together the flour, baking powder, cinnamon, nutmeg and salt.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Fold through the diced apples, ensuring they are evenly distributed.
- Pour the batter into the prepared tin and smooth the top.
- Bake for 35–40 minutes, or until golden and a skewer inserted into the centre comes out clean.
- Allow to cool slightly before removing from the tin. Serve warm or at room temperature.
