Easy Butter Bean Tagine

This fragrant butter bean recipe is a flavour-packed take on a Moroccan-style tagine, combining creamy butter beans with soft aubergine, warming spices, and a touch of natural sweetness from dried apricots. Topped with pomegranate, toasted almonds, and a spoonful of vegan yoghurt, it's the perfect hearty meal gut-loving meal - all served with soft flatbreads for dipping.

Ingredients

  • 1 tbsp olive oil
  • 1 medium red onion, finely chopped
  • 4 cloves of garlic
  • 1 aubergine, chopped into bite-sized pieces
  • 1 tin (400g) chopped tomatoes
  • 1 tin (400g) butter beans
  • 500ml vegetable stock
  • 1tbsp harissa paste
  • 1/2 tsp ground cinnamon
  • 1 tsp garam masala
  • 5 dried apricots
  • 80g flaked almonds
  • 2 tbsp fresh parsley
  • 3 tbsp vegan yoghurt (to serve)
  • 2 tbsp pomegranates (to serve)
  • 3 flatbreads (to serve)

Method

  1. Heat the olive oil in a large pan over medium heat. Add the onion and cook for 4 minutes until soft. Stir in the garlic and cook for another minute.
  2. Add the harissa, cinnamon, and garam masala. Cook for 1 minute to release the flavours.
  3. Stir in the aubergine and cook for 5 minutes until starting to soften.
  4. Add the chopped tomatoes, vegetable stock, butter beans, flaked almonds and dried apricots. Stir well, bring to a simmer, then cover and cook for 30 minutes until the aubergine is tender and the sauce has thickened slightly.
  5. Stir through the fresh parsley and season with salt and pepper.
  6. Spoon the tagine into bowls, top with a dollop of vegan Greek yoghurt and pomegranate seeds. Serve alongside warm flatbreads.
