Easy Butter Bean Tagine

Ingredients
- 1 tbsp olive oil
- 1 medium red onion, finely chopped
- 4 cloves of garlic
- 1 aubergine, chopped into bite-sized pieces
- 1 tin (400g) chopped tomatoes
- 1 tin (400g) butter beans
- 500ml vegetable stock
- 1tbsp harissa paste
- 1/2 tsp ground cinnamon
- 1 tsp garam masala
- 5 dried apricots
- 80g flaked almonds
- 2 tbsp fresh parsley
- 3 tbsp vegan yoghurt (to serve)
- 2 tbsp pomegranates (to serve)
- 3 flatbreads (to serve)
Method
- Heat the olive oil in a large pan over medium heat. Add the onion and cook for 4 minutes until soft. Stir in the garlic and cook for another minute.
- Add the harissa, cinnamon, and garam masala. Cook for 1 minute to release the flavours.
- Stir in the aubergine and cook for 5 minutes until starting to soften.
- Add the chopped tomatoes, vegetable stock, butter beans, flaked almonds and dried apricots. Stir well, bring to a simmer, then cover and cook for 30 minutes until the aubergine is tender and the sauce has thickened slightly.
- Stir through the fresh parsley and season with salt and pepper.
- Spoon the tagine into bowls, top with a dollop of vegan Greek yoghurt and pomegranate seeds. Serve alongside warm flatbreads.
