Ingredients

Cake

  • Biomel Pure Vanilla Complete Gut
  • 230g flour
  • 1/2 tsp baking soda
  • 3/4 tsp baking powder
  • 1 vegan egg alternative (e.g flax seed egg)
  • 110g coconut yoghurt
  • 75g coconut sugar
  • 90g molasses or treacle
  • 100g pitted dates
  • 115g softened vegan butter
  • 2 1/2 tsp cinnamon
  • 2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 165ml m*lk
  • pinch of salt

Caramel Sauce

  • 60g coconut sugar
  • 70ml coconut m*lk
  • 40g vegan butter
  • 1 tbsp molasses
  • pinch of salt

Method

Cake

  1. Chop up the dates and add to a pan on a low heat.
  2. Slowly heat up the dates with 165ml of m*lk and baking soda until softly broken down.
  3. Take off the heat and mash with a fork into a paste and set aside.
  4. Preheat your oven to 180°C and line an 8-inch tin.
  5. Stir 115g of the softened butter, 75g sugar, 90g molasses, pinch of salt until creamy.
  6. Add in the vegan egg substitute, 80g yoghurt, and date mixture you made earlier, mixing well.
  7. Sieve in the dry ingredients (spices and flour) until combined. If it looks a little dry, add a splash more m*lk.
  8. Pour the batter into the tin and bake for 30 minutes, or until a cake tester comes out clean.
  9. In a separate bowl, add the remaining 2 tablespoons of yoghurt with Biomel complete gut powder.

Caramel Sauce

  1. Melt the butter with sugar, molasses, and salt.
  2. Add the coconut m*lk and stir on a low heat until just thickened to coat the spoon.
  3. Poke several holes in the cake and pour over 2/3 of the sauce.
  4. Reserve the rest of the sticky sauce for serving with the cake and Biomel-infused yoghurt.
